First seperate into cloves and chop the head off.
The skin will automatically be seperated with the flesh.
Remove the sprout inside.
Chop with a chopper (around $100 in Wing On Department Store or Japan Home).To remove the odor, rub fingers with a stainless steel spoon with detergent for 1 minute.
Mix
the chopped garlic with olive oil and jar them in a reused container
from Amoy or Lee Kum Kee. Keep in a fridge and can store up to a month!
